Fluffy Pancakes
I’m not much of a sweet breakfast girl anymore, but I LOVE a good pancake. I may be entirely biased, but my grandma and dad always made the best pancakes growing up. This is the recipe they used, and they turn out amazing every time. Sometimes, depending on where you are, they may be fluffier than other times, but they never become the thin little pancakes like you find at McDonalds.

Fluffy Pancakes
Ingredients
- 1 1/2 c flour
- 3 T sugar
- 1 t salt
- 1 3/4 t baking powder
- 1 - 1 1/4 c milk
- 2 eggs
- 3 T butter, melted and cooled
- Butter for cooking
Instructions
- Melt butter, and let cool
- Whisk eggs and 1 cup of milk in a 2 cup liquid measuring cup
- Mix all dry ingredients together, then gently mix in the liquid ingredients. BE CAREFUL NOT TO OVER-MIX! Mix just until you don't visibly see dry flour, it will be lumpy
- Spoon 1/4 c of batter and cook at 325 on a griddle or in a pan over medium-low heat with butter. Flip when you see the bubbles around the edge pop (they'll leave little holes). Cook for another ~2 minutes. Transfer to plate and keep cooking until all batter is used up.
- Serve with butter and maple syrup
Notes
Feel free to mix in blueberries or chocolate chips! Add mix-ins just before the batter is mixed enough to prevent over-mixing.
