Pumpkin Bread Muffins
In high school, I took a health and cooking class, this was a recipe we got from that class. I’ve literally been making it ever since. It’s moist, not too pumpkin-y, and tastes like fall! Anyone I’ve ever made this for either requests me to make more or for the recipe itself, so get ready to make this all the time (or share the recipe lol).

Pumpkin Bread
Ingredients
- 1 15-oz can pumpkin puree (Libby brand is the best)
- 2 c flour
- 1 1/2 t cinnamon
- 1/2 t cloves
- 1/2 t ginger
- 1/4 t nutmeg
- 1/2 t baking soda
- 1 t salt
- 2 c sugar
- 1/2 c brown sugar
- 1/2 c water (or sourdough starter)
- 3/4 c oil
- 3 eggs
Instructions
- Preheat oven to 350. Put cupcake liners in 2 12-cup muffin tins
- In a large bowl, mix all wet ingredients, until well blended.
- In a separate, smaller bowl, whisk together all dry ingredients.
- Mix dry ingredients into the wet ingredients in three batches until just combined.
- Pour into prepared muffin cups, filling 2/3 of the way
- Bake for 22-24 minutes until a toothpick is entered into the center of a muffin in the middle of the pan and comes out dry (crumbs are fine)
Notes
Can also be made into full blown pumpkin bread!
- instead of muffin pans, prep two loaf pans with softened butter and flour
- bake for 50 minutes
