Healthy Orange Chicken

My husband went through a diet phase while working to compete in a powerlifting meet (meaning I had to measure every recipe I made to the gram so he could track it). Now, we’re past that phase, but this is still one of our go-to’s. A simple sauce, where I make the marinade at the same time, and almost no work once it’s in the pan, this one is sure to be in your recipe rotation, just like mine.

Healthy Orange Chicken

This recipe is both easy and healthy (a winning combo in my book)

Ingredients

Marinade
  • 1 lb chicken breast, cubed
  • 1/2 t baking soda
  • 2 T fresh orange juice
  • 1 1/2 T soy sauce
  • 1 T cornstarch
  • 1 t garlic, minced
  • 1 t ginger, grated
  • 1 T oil (for cooking)
Orange Sauce
  • 1/3 c fresh orange juice
  • 1 T soy sauce
  • 1/4 c rice vinegar
  • 1 1/2 T chili garlic suace
  • 1/2 T cornstarch
  • 2 t orange zest
  • 3 garlic cloves, minced
  • 1 t ginger, grated
  • 1/2 t red chili flakes
  • 3 T brown sugar
  • salt to taste
Toppings
  • green onions
  • sesame seeds

Instructions

Marinade
  1. I like to build the marinade and sauce at the same time since they have similar ingredients
  2. Combine all marinade ingredients in a medium bowl, whisk to combine. Add the cubed chicken, stir to coat. Marinate for 30 minutes - overnight (the longer the better)
  3. In another bowl or 2 cup liquid measuring cup, combine all sauce ingredients. Whisk together until sugar dissolves
  4. Heat a wide skillet or wok over medium heat, add oil and marinaded chicken. Cook 4-5 minutes, or until cooked through.
  5. Stir in the sauce, and cook the chicken in it for 5 minutes. When the suace thickens, add some sesame seeds and green onions
  6. Serve over rice
