Thai Basil Chicken
Also known as Pad Krapow Gai, this is one of my favorite meals to make when I don’t have a ton of time to cook. It takes few ingredients, less than 30 minutes to whip up, and packs a punch in the flavor department. It may not look like the most delicious thing you’ve ever eaten, but I promise, it’ll have you coming back for more!

Thai Basil Chicken
Ingredients
- 3 T vegetable oil
- 3 Thai bird chilis (or 1-2 serranos), sliced thin
- 3 shallots, sliced thin
- 5 cloves of garlic, minced
- 1 lb ground chicken
- 2 T soy sauce
- 1 T fish sauce
- 2 t sugar
- 1/3 c chicken stock
- 1 bunch basil
Instructions
- Heat wok with oil over high heat. Add the thinly sliced shallots, chilis, and minced garlic once heated, fry for 1-2 minutes. Add ground chicken, breaking it up into small bits as it cooks.
- Once chicken is cooked, add soy and fish sauces, and sugar. Stir-fry for another minute, then deglaze the pan with the chicken stock.

- I opt for serranos in this because my grocery store only sells mega packs of Thai bird chilis, it's still delicious! Adjust to your spice tolerance

I found a version of this when trying to find a fun way to cook up ground chicken. With my husband on his diet train, I needed to find a way to make the lower calorie dishes he required still super delicious, and this checks all the boxes. I’m not a girl who can eat boring, plain chicken and rice, so this was my take on his old go-to diet meal that still makes the foodie in me happy.
It only takes a few minutes to chop up the ingredients, then you just throw it all in a pan. When you’re in a time crunch for dinner, nothing is better than that!
My only complaint is that I almost never am able to make it with Thai bird chilis, because our local store only sells them in a super mega pack (and I can never use the others fast enough). Instead I use a Serrano or two, and it still turns out amazingly!
